Cranberry Orange Bubble Bread

My mum and I like to make this waaaaay early Christmas morning – then when everyone’s up, we have fresh coffee and chunks of warm bread while we rip through open our presents.

Baking temp: 375 F
1 cup milk
1 egg
1 tbsp butter or margarine
3 cups flour
1 tbsp granulated sugar
2 tsp grated orange zest
1 tsp salt
1/2 cup dried cranberries (or substitute fruit)
2 tsp yeast
1. Add the ingredients to the bread machine and select the DOUGH cycle.
2. When the dough is ready, remove from pan and divide into 16 sections. Shape each piece into a ball and place in a greased 9″ springform pan. Cover the filled pan with a tea towel and allow to rise until doubled, about 45 mins.
3. (optional) glaze with a beaten egg for a shiny top.
4. Bake on the lower rack for 20-25 mins until golden. Remove from pan immediately and cool on rack.
