These, and a few other stalwarts, show up every two or three weeks without fail.<br \/>\nThe other regular item on the menu is the <a href=\"http:\/\/www.golding.ca\/recipes\/2008\/06\/easiest_mac_cheese_ever.html\">macaroni &amp; cheese<\/a>, which Colin now makes pretty much all by himself (see? Having kids <i>can<\/i> pay off!). We have this mac &amp; cheese every week, usually with a couple of very good friends and some trashy TV. It is a good, good thing.<br \/>\nThis past week, however, temperatures hit the mid-thirties, and coupled with our traditional high humidity, the weather just wasn\u2019t good mac &amp; cheese weather, no matter how amazing the mac &amp; cheese. My very smart friend, and frequent attendee of the weekly mac &amp; cheese night, <a href=\"http:\/\/auroradoesfood.wordpress.com\/\">Aurora<\/a>, suggested pasta salad instead \u2013 so Colin went looking, and found this recipe in the <a href=\"http:\/\/www.moosewoodrestaurant.com\/cgi\/store.cgi?cart_id=7234394.20754&amp;page=.\/Html\/merch_books.html\">Moosewood Low-Fat Favourites<\/a> (which, incidentally, I strongly recommend. TONS of great recipes, mostly vegetarian (Moosewood has apparently decided that fish are vegetables), and reasonably easy on the diet.). We made a few modifications, and ended up with a salad that was unanimously lauded:<\/p>\n<p><!--more--><br \/>\nPasta: 1 box whole wheat macaroni (14 oz. uncooked)<br \/>\nCream sauce:<br \/>\n1 cup low-fat cottage cheese<br \/>\n1\/2 cup olive oil mayonnaise (or low-fat)<br \/>\n2 tbsp cider vinegar<br \/>\n2 tbsp olive oil<br \/>\n2 garlic cloves, minced<br \/>\nSalad:<br \/>\n4 cups broccoli florets, steamed for 5 minutes<br \/>\n1\/2 cup chopped cucumber<br \/>\n2 stalks celery, chopped<br \/>\n1 large onion, chopped<br \/>\n2 medium dill pickles, chopped<br \/>\nTop with:<br \/>\nfresh dill<br \/>\n2 cups cherry tomatoes<br \/>\nInstructions:<br \/>\n1. Prepare the pasta according to package directions &#8211; you want relatively firm, al dente, pasta. Rinse in cold water and set aside.<br \/>\n2. Combine all the sauce ingredients in a food processor or blender until smooth, and set aside.<br \/>\n3. Mix the pasta with the other salad ingredients, then mix in the sauce.
