{"id":13,"date":"2004-08-19T22:37:21","date_gmt":"2004-08-19T22:37:21","guid":{"rendered":"http:\/\/34.95.25.178\/recipes\/2004\/08\/indian_ratatouille\/"},"modified":"2004-08-19T22:37:21","modified_gmt":"2004-08-19T22:37:21","slug":"indian_ratatouille","status":"publish","type":"post","link":"https:\/\/www.golding.ca\/recipes\/2004\/08\/indian_ratatouille\/","title":{"rendered":"Indian Ratatouille"},"content":{"rendered":"<p><i>from <u>Moosewood New Classics<\/u><\/i><br \/>\n<img loading=\"lazy\" decoding=\"async\" alt=\"ratatouille2.jpg\" src=\"http:\/\/www.golding.ca\/recipes\/archives\/ratatouille2.jpg\" width=\"512\" height=\"384\" border=\"0\" \/><br \/>\n<i>Indian Ratatouille with Morrocan flatbread and couscous, not to mention fresh coriander from the garden<\/i><\/p>\n<p><!--more--><br \/>\n2 cups diced onion<br \/>\n2 tbsp veg oil<br \/>\n2 cloves garlic, pressed<br \/>\n1 fresh chile (seed for milder)<br \/>\n1 tbsp fresh grated ginger<br \/>\n1 tsp ground cumin<br \/>\n1 tsp ground coriander<br \/>\n1\/2 tsp turmeric<br \/>\n1\/2 tsp cinnamon<br \/>\n1\/4 tsp cardamom<br \/>\n1 tsp salt<br \/>\npinch of crumbled saffron<br \/>\n1 cup orange juice<br \/>\n5 cups cubed eggplant<br \/>\n4 cups cubed zucchini (or yellow squash or pattypans)<br \/>\n1 1\/2 cups diced red pepper<br \/>\n3 cups diced tomatoes (canned ok)<br \/>\n1\/4 cup chopped fresh basil<br \/>\nSaute the onions until translucent, about 10 mins. Stir in all the spices, including the salt, and saute about a minute, stirring constantly. Add juice and eggplant, toss to coat with spices, and simmer 10 to 15 minutes, until the eggplant starts to soften.<br \/>\nAdd the rest of the ingredients, stir and simmer another 15 minutes or so, until everything&#8217;s tender.
