{"id":12,"date":"2004-06-28T15:40:04","date_gmt":"2004-06-28T15:40:04","guid":{"rendered":"http:\/\/34.95.25.178\/recipes\/2004\/06\/luxury_nut_and_seed_loaf\/"},"modified":"2004-06-28T15:40:04","modified_gmt":"2004-06-28T15:40:04","slug":"luxury_nut_and_seed_loaf","status":"publish","type":"post","link":"https:\/\/www.golding.ca\/recipes\/2004\/06\/luxury_nut_and_seed_loaf\/","title":{"rendered":"Luxury Nut and Seed Loaf"},"content":{"rendered":"<p>This is a very nice loaf that uses 4 different nuts and 2 kinds of seeds (or 5 and 1, depending on your personal stand on the pine nut issue).<\/p>\n<p><!--more--><br \/>\n8 ounces bulgur wheat<br \/>\n12 ounces boiling water<br \/>\n3 tbsp soy sauce<br \/>\n6 ounces pistachio nuts<br \/>\n6 ounces pine nuts<br \/>\n8 ounces blanched almonds<br \/>\n6 ounces cashews<br \/>\n4 ounces hazelnuts<br \/>\n4 ounces pumpkin seeds<br \/>\n12 ounces finely chopped onions<br \/>\n4 tbsp finely chopped fresh parsley<br \/>\n2 generous tsp dried lemon thyme<br \/>\n4 large eggs, lightly whisked<br \/>\n4 tbsp sunflower oil<br \/>\n1. Place bulgur in a mixing bowl and pour on the water and soy sauce. Cover and let stand 25 minutes.<br \/>\n2. Grind pistachios and pine nuts together, removing 2 tbsp for the topping. Grind the rest of the nuts and seeds, then add the bulgur. Finally, mix together with the remaining ingredients. Let stand during Step 3:<br \/>\n3. Oil a large baking sheet and line with wax paper, then prepare a foil hood for the loaf.<br \/>\n4. Shape the mixture into a loaf, pressing firmly together. Prick the top with a skewer and drizzle a little oil over the top, finally sprinkling with the reserved nuts. Cap loosely with the foil hood.<br \/>\n5. Bake at 375 F for 40 minutes.
